Walnut Cheese Pasta

Ingredients
- 400 g spaghetti
- Salt
- 100 g walnut kernels
- 2 tbsp olive oil
- 1 Garlic clove
- 100 ml dry white wine
- 100 ml Vegetable broth
- 100 ml heavy cream
- 100 g Gruyère cheese
- pepper (ground)
- handful of arugula
- 4 tbsp freshly grated Parmesan
Instructions

Cook the spaghetti in plenty of boiling salted water until al dente.

Roast the walnuts in a large pan with the olive oil. Peel and press the garlic into the pan. After 1-2 minutes, pour in white wine, broth, and cream.

Add the chopped Gruyère cheese and stir until melted. Season with salt and pepper.

Wash the arugula and cut into fine strips. Drain the pasta and let it sit briefly before tossing it into the cheese sauce.

Fold in the arugula, divide the pasta among four plates, sprinkle with parmesan, and serve.
