Ingredients

  • 4 eggs
  • 250 g sugar
  • 200 g ground walnuts
  • 3 tbsp breadcrumbs
  • 1 pack waffle base (ready-made)
  • 250 g soft butter
  • 250 g powdered sugar
  • 2 egg yolks
  • 3 tbsp strong coffee (espresso)
  • 1 tbsp ground coffee
  • 1 handful walnuts (roasted, coarsely chopped)

Instructions

    Beat the egg whites until stiff peaks form, add sugar and continue beating. Add the yolk, sprinkle in the ground walnuts and breadcrumbs. Line a baking pan (about 35 x 45 cm) with waffle bases, spread the walnut mixture evenly over them, and bake in a preheated oven at medium heat (180 °C, or 165 °C fan‑forced) for about 20 minutes.

    Let the batter cool.

    For the cream, mix the soft butter with powdered sugar, add the yolk and continue mixing. Then stir in the espresso and ground coffee. Spread the cream over the cake.

    Sprinkle with roasted, coarsely chopped walnuts and let set. Slice the cake with a knife dipped in hot water (about 60 slices).

    Tip: The cake can also be made with almonds or hazelnuts; roast them first and then chop roughly.
