Ingredients
- 40 g green pearl tapioca (Asia store)
- 200 ml dry white wine
- 24 stems of wild mint
- 100 g sugar
- 1 untreated lemon

Add the tapioca to a pot with 1 l water and the white wine, and let it soak for about 2 hours.

Wash the wild mint, shake off excess moisture, set aside some leaves for garnish, crush the remaining stems and add them to the tapioca. Let steep for another hour. Stir in the sugar, bring the mixture to a boil, and simmer over medium heat until the tapioca pearls are clear. Rinse the lemon under hot water, pat dry, slice into rounds and set aside. Remove from heat, discard the mint stems, and spread the cold bowl with lemon slices on a plate. Chill and serve garnished with the remaining mint leaves.
