Wagyu-Bratwurst with Vegetables

Ingredients

  • 250 g Borlotti beans
  • 1 onion
  • 1 Garlic clove
  • 2 carrots
  • 2 stalks celery
  • 2 tbsp olive oil
  • 200 ml dry white wine
  • 400 g diced tomatoes (canned)
  • 4 Wagyu sausages
  • Salt
  • pinch sugar
  • 1 tsp lemon juice
  • Cayenne pepper
  • 1 tbsp freshly chopped parsley

Instructions

    Soak the beans overnight in water.

    Peel and finely dice the onion and garlic. Wash, peel, and cube the carrots and celery. Sauté the vegetables in 1 tbsp hot oil for 2-3 minutes. Deglaze with wine and add tomatoes. Add drained beans, cover, and simmer while stirring occasionally for about 1 hour, adding a little water if needed.

    Brown the sausages in a grill pan with the remaining oil for 4-5 minutes until golden brown.

    Season the vegetable mixture with salt, sugar, lemon juice, and cayenne pepper, then spread on plates. Place the halved sausages on top and garnish with parsley before serving.
