Ingredients
- 800 g beef stew meat (cubed)
- 2 tbsp oil
- 2 tbsp Anatta powder
- 2 cloves garlic (finely chopped)
- 1 bunch small carrots
- 1 tsp grated ginger
- 2 chili peppers (sliced into rings)
- 4 shallots (peeled and quartered)
- 1 stalk lemongrass
- 1 tsp five-spice mix
- 2 star anise
- 1 bunch Asian basil (chopped)
- fish sauce (to taste)

Peel carrots, remove greens, and halve them.

Crush chili, ginger, and garlic in a mortar. Sauté this spice paste in hot oil, add beef and brown it, then stir in Anatta powder. Add remaining spices, shallots, and carrots. Deglaze with a little water and cover to simmer for about 1 hour over low heat, adding more water as needed to create a thick sauce. Finally fold in basil, season with fish sauce, and serve.
