Ingredients

  • 24 Venus mussels
  • 2 Garlic cloves
  • 2 shallots
  • 3 tbsp chopped parsley
  • 3 tbsp chopped fresh coriander
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • Sea salt

Instructions

    Peel and finely chop the shallots and garlic, mix with parsley and coriander, stir in the oil and season with salt and pepper.

    Wash and clean the mussels, then open them and detach the muscle attachments from the shells.

    Leave each mussel in one half of its shell. Sprinkle a thick layer of coarse sea salt on a baking tray for stability, place the mussel halves on top, and distribute the herb filling over the mussels.

    Bake in a preheated oven at 220°C (428°F) for about 10 minutes until golden.

    Serve immediately.
