Ingredients

  • 4 venison steaks (about 180 g)
  • Salt
  • Pepper (freshly ground)
  • oil
  • 4 shallots
  • 5 tbsp red wine
  • 150 ml game stock (from the bottle)
  • 16 cherry tomatoes
  • 4 wooden skewers
  • 400 g beans

Instructions

    Brush steaks with oil, season with salt and pepper, grill each side 1 minute over high heat, then continue grilling both sides for 2-4 minutes on medium heat depending on preference.

    Wash tomatoes, pat dry, skewer them, brush lightly with oil, and grill on the edge of the grill while turning occasionally.

    Peel shallots, dice finely, sauté in 2 tbsp oil until translucent, add red wine and reduce quickly, then pour in stock and reduce to half. Season with salt and pepper.

    Wash beans and boil in salted water for about 10 minutes. Drain, let drain, then arrange on plates with steaks, shallot sauce, and tomato skewers.
