Ingredients
- 4 venison steaks (≈150 g)
- Salt
- Pepper (freshly ground)
- 2 tbsp clarified butter
- 2 egg yolks
- 1 egg
- 150 ml strong beer
- 2 tbsp Orange juice
- Cinnamon

Season the steaks with salt and pepper, then sear each side for 1 minute in hot clarified butter. Reduce heat to medium and brown both sides for 3-4 minutes.

Whisk the egg yolks and whole egg in a warm water bath using an electric hand mixer until frothy; gradually pour in the beer while stirring until the sauce is creamy. Season with orange juice and a pinch of cinnamon.
