Ingredients
- 0.5 can kidney beans
- 1 can small corn
- 1 onion
- 1 Garlic clove
- 0.5 red bell pepper
- 1 tomato
- 1 Carrot
- 50 ml vegetable broth (add more if needed)
- 0.5 chili pepper (red)
- Salt
- Pepper
- 1 tbsp oil
- 1 tbsp chopped parsley
- 4 whole wheat tortilla sheets (ready-made)

Drain the kidney beans and rinse under running water. Drain the corn. Peel and finely chop the onion and garlic. Wash, halve, seed and dice the bell pepper. Blanch the tomato, peel, halve, seed and cube it. Peel the carrot and shave into thin slices. Halve the chili, seed, remove white membranes and chop. Heat oil in a pan and sauté onions with garlic. Add bell pepper and carrots, cook briefly, pour in broth, add remaining vegetables and seasonings, cover and simmer for about 5 minutes, taste.

Heat tortilla sheets in the oven and fill them with the mixture. Fold two opposite sides and roll up. Serve immediately.
