Vegetarian Onion Tart
The vegetarian onion tart from Spoonsparrow is a popular classic that consistently impresses.
Ingredients
- 0.25 cube yeast
- 1 tsp Honey
- 200 g wheat flour Type 1050
- 60 g room‑temperature butter
- Salt
- 800 g onions
- 2 tbsp olive oil
- 2 Eggs
- 400 g sour cream (10% fat)
- Pepper
- 1 tsp ground cumin
- 2 Spring Onions

Dissolve yeast with honey in 150 ml lukewarm water and let rise for 5 minutes. Add flour to a bowl, press a well in the center and pour in the yeast mixture. Cover with a kitchen towel and let rest about 15 minutes. Add butter and salt, knead into a smooth dough, then cover again and let rise for about 60 minutes.

Meanwhile peel, halve and slice onions into thin strips. Heat oil in a pan. Sauté onions over medium heat for 10 minutes. Let cool slightly, then mix with eggs and sour cream and season with salt, pepper and cumin.

Knead dough once more, roll it out to the size of an empty baking tray, place on a parchment‑lined tray and lift up a border. Spread onion mixture over the dough and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 40 minutes.

During this time trim, wash and slice spring onions into thin rings. Remove tart from oven, sprinkle with spring onions and serve cut into pieces.
