Vegetarian Curry

Ingredients

  • 1 cauliflower (about 700 g, cleaned and cut into small florets)
  • 500 g potatoes (peeled and cut into 2 cm pieces)
  • 1 shallot (finely chopped)
  • 2 tbsp sunflower oil
  • 2 Garlic cloves
  • 2 tbsp Curry Powder
  • 500 ml vegetable broth
  • 100 g heavy cream
  • 2 tsp starch
  • Salt
  • Pepper

Instructions

    Sauté the shallot in oil until translucent, then press in the garlic and add cauliflower and potatoes to soften.

    Sprinkle curry powder over the vegetables and sauté briefly; pour in broth and simmer for about 10 minutes.

    Whisk starch with cream until smooth and stir into the dish to thicken; season with salt and pepper.

    Serve with rice and garnish with mint.
