Vegetable Tacos with Avocado

Ingredients
- 4 taco shells
- 1 onion
- 1 tbsp chopped coriander
- 6 tomatoes
- 0.333 cucumber
- 1 Avocado
- 4 tbsp kidney beans
- 1 tsp Honey
- 1 tbsp chili sauce
- 0.5 lemon (juice)
- Sea salt
- Cayenne pepper
Instructions

Peel the onion and slice into thin rings.

Wash the tomatoes. Remove the stem from 3 tomatoes and slice them. Blanch the other 3 tomatoes for a few seconds, shock in ice water, peel, quarter, seed, and dice. Mix with half of the lemon juice, chili sauce, and honey. Season the salsa with salt and cayenne pepper.

Peel the cucumber, cut lengthwise in halves, remove seeds, and slice into sticks.

Halve the avocado, remove the pit, and peel. Mash with a fork using the remaining lemon juice, salt, and cayenne pepper.

Distribute tomato slices, cucumber sticks, onion rings, and coriander onto the tacos. Add salsa and avocado cream to each and serve.
