Vegetable Stew with Sweet Potatoes and Zucchini

A hearty vegetable stew with sweet potatoes and zucchini that is easy to prepare and tastes great for dinner, lunch, or take‑out.

Ingredients

  • 1 Zucchini
  • 750 g sweet potatoes
  • 2 shallots
  • 1 Garlic clove
  • 1 tsp mild curry powder
  • Salt
  • Pepper (freshly ground)
  • 125 ml passata tomato sauce
  • 125 ml Vegetable broth
  • 100 g black olives (pitted)
  • basil (for garnish)

Instructions

    Wash, trim, and cut the zucchini into quarters and bite‑size pieces. Peel the sweet potatoes and dice them into small cubes. Peel and finely chop the shallots and garlic.

    Heat oil in a pot, add the sweet potatoes and zucchini, and sauté until lightly browned. Add the garlic and shallots and cook for a minute more. Sprinkle with curry powder, season with salt and pepper, then pour in the passata and broth. Cover and simmer for about 10 minutes until the vegetables are tender yet firm.
