Vegetable Rösti

Ingredients
- 80 g Skimmed Quark
- 6 tbsp Mineral water (with carbonation)
- 6 Cherry tomatoes
- Salt
- Pepper
- 150 g Zucchini (1 Zucchini)
- 300 g large potatoes (mainly waxy; 2 large potatoes)
- 1 tbsp Olive Oil
- 1 bunch chives
Instructions

Whisk quark and mineral water together in a bowl until smooth.

Wash, quarter the tomatoes, cut off the stem ends, and remove the seeds.

Finely dice the tomato flesh and stir it into the quark. Season with salt and pepper. Wash and clean the zucchini. Peel and wash the potatoes.

Grate the zucchini and potatoes on a box grater. Squeeze the shreds vigorously several times with your hands in portions. Let the liquid drain into a bowl for 1-2 minutes until the potato starch settles at the bottom. Pour off the liquid and mix the starch into the vegetable shreds.

Heat the oil in a large non-stick pan over medium heat. Salt and pepper the vegetable shreds. Place 1 tbsp of vegetable shreds in the pan for 6 small Rostis and gently press them flat with a spatula. Fry for about 3 minutes per side until crispy. (You can also bake 1 large Rösti, but flipping will be more difficult).

Meanwhile, wash, shake dry, and chop the chives into small rolls. Serve the vegetable Rösti with tomato quark and chives.
