Vegetable Patties with Yogurt Sauce

Ingredients
- 2 Spring Onions
- 1 tbsp chopped parsley
- 400 g thick green beans
- 2 tbsp Soy sauce
- 1 egg
- 2 tbsp breadcrumbs
- 2 Tbsp grated Parmesan
- Salt
- Pepper
- 2 tbsp oil
- 200 g yogurt
- 1 tbsp heavy cream
- 1 tbsp Lemon Juice
- Salt
- ground pepper
- 2 tbsp finely chopped parsley
- 1 large red bell pepper
- parsley for garnish
Instructions

Wash, trim and finely chop the spring onions. Boil the green beans in salted water for about 5 minutes, drain and puree. Mix the bean puree with onion, parsley, soy sauce, egg, breadcrumbs and cheese into a dough. Knead well and season with pepper. Shape the dough into eight flat patties and fry them in hot oil in a large pan, about 2-3 minutes per side until golden brown.

Whisk yogurt with cream, lemon juice, salt, pepper and parsley and taste.

Wash, trim, halve, deseed and remove white membranes from the bell pepper, then dice it.

Arrange the patties on plates, top with diced bell pepper and sprinkle parsley.
