Vegetable Juice

Full vitamin power in a glass: Try the delicious vegetable juice with this simple recipe!
Ingredients
- 250 g tomatoes
- 200 g cucumber
- 0.5 red bell pepper
- 100 ml mineral water
- Salt
- ground pepper
- Tabasco
- 1 tsp finely chopped parsley
- 1 tsp freshly squeezed lemon juice
- 6 tbsp crushed ice
- 1 tbsp chives

Briefly steep the tomatoes for a few seconds, cool them, peel, quarter and deseed.

Peel the cucumber, cut it lengthwise in half and scoop out the seeds with a spoon. Wash, trim, deseed the pepper and remove all white membranes.

Coarsely chop the vegetables, blend with mineral water, then strain through a sieve and season with salt, pepper, a splash of Tabasco and lemon juice, stirring in parsley.

Add 3 tbsp crushed ice to each tall glass, pour in the vegetable juice, and sprinkle with chives before serving.
