Vegetable Ground Meat Gratin

Ingredients
- 400 g boiled potatoes
- 1 onion
- 1 red bell pepper
- 2 tbsp oil
- 500 g mixed ground meat (or soy ground meat substitute / reform house)
- 2 tsp Paprika powder
- 2 tbsp Tomato paste
- 1 tbsp chopped parsley
- 1 Zucchini
- 2 tbsp clarified butter
- 300 g green beans
- Salt
- freshly ground pepper
- 200 g grated Gruyère cheese

Cut potatoes, bell pepper and zucchini into small bite‑sized cubes. Peel the onion, finely dice it and sauté in oil.

Add the ground meat (soy if using) and cook until crumbly; stir in tomato paste, season with salt, pepper and paprika powder, and add chopped parsley.

Then remove the meat from the pan and set aside.

Sauté the potato cubes in the remaining oil, then steam the bell pepper and zucchini cubes in clarified butter for about 5 minutes.

Wash, trim green beans and cook them in boiling salted water for about 10 minutes; drain, rinse with cold water and let drain.

Grease a baking dish and layer the vegetables and ground meat, sprinkle with cheese, and bake in preheated oven at 220°C (428°F) for about 20‑30 minutes.
