Vegetable Ground Beef Soup

The autumn vegetable ground beef soup from Spoonsparrow can be prepared very well in advance and warms you from the inside!

Ingredients

  • 500 g waxy potatoes
  • 2 carrots
  • 1 Garlic clove
  • 1 stalk of leek
  • 2 tbsp olive oil
  • 300 g Ground Beef
  • 800 ml beef broth
  • 100 g Sour cream
  • Salt
  • Pepper
  • nutmeg

Instructions

    Peel the potatoes, carrots and garlic. Dice the potatoes, slice the carrots into rounds and finely chop the garlic. Cut the leek lengthwise in half, wash, trim and cut into strips.

    Heat oil in a pot and brown the ground beef over high heat until crumbly. Add the prepared vegetables briefly and deglaze with broth. Simmer for about 20 minutes over low heat.

    Stir in the sour cream. Season with salt, pepper and freshly grated nutmeg before serving.
