Ingredients

  • 2 Eggs
  • 300 g flour
  • 300 ml sparkling mineral water
  • 1 tbsp curry powder
  • salt (pepper)
  • 1.2 kg mixed vegetables (broccoli, bell pepper, carrots, zucchini, fennel, etc.)
  • 1.5 l vegetable oil

Instructions

    Separate the eggs; whisk yolks with flour, ½ tsp salt, and sparkling mineral water into a smooth batter. Season with curry powder.

    Whisk egg whites until stiff peaks form, then gently fold them into the batter.

    Wash, trim, and cut vegetables into bite‑sized pieces. Blanch in salted water for 3 minutes until just tender, drain, season with salt and pepper.
