Ingredients

  • 150 g Whole wheat flour
  • 1 pinch salt
  • 1 tbsp Sunflower oil
  • 50 g chopped frozen spinach
  • 3 tbsp water
  • 6 hard‑boiled eggs
  • 150 g arugula
  • 400 g Tomatoes
  • 300 g radish
  • 75 g mayonnaise
  • 2 tbsp mustard
  • 2 tsp Curry powder
  • 1 tsp sweet paprika
  • 2 tsp black cumin

Instructions

    For the tortillas, mix flour with salt, oil, thawed spinach and water into a smooth dough; cover and rest for about 20 minutes.

    Knead the dough again on a floured surface, divide into four pieces, roll each into a circle (≈25 cm) thinly. Fry each side in a dry pan for about 1 minute until dark brown spots appear. When the dough puffs up, press it down with a spatula and set warm.

    Wash and dry arugula, then cut finely.

    Wash tomatoes, quarter them, remove seeds and slice into strips. Peel radish, wash and grate roughly. Mix arugula, tomato strips and radish; season with salt and pepper.

    Whisk mayonnaise with mustard, curry powder and paprika. Peel and chop eggs, add to the sauce and mix well.

    Lightly toast black cumin in a dry pan until fragrant.

    Spread the arugula‑tomato mixture on the tortillas, pour the egg‑mayonnaise over it, sprinkle with black cumin, roll up and serve immediately.
