Vegetable Curry

Ingredients
- 300 g cauliflower florets
- 2 Bell peppers
- 200 g beans
- 6 tomatoes
- 2 carrots
- 200 g peas
- 250 g corn kernels
- 1 Garlic clove
- 1 onion
- 2 tbsp Ghee
- Garam masala
- 1 tbsp red curry paste
- 150 ml coconut milk
- Salt
- Cayenne pepper
Instructions

Wash the bell pepper, halve it, remove seeds and dice.

Wash, trim and halve the beans.

Blanch tomatoes for a few seconds, shock in cold water, peel, quarter, seed and cube.

Peel carrots, cut lengthwise and dice similarly.

Peel garlic and onion and finely chop them.

Sauté onion and garlic in hot ghee. Add cauliflower, bell pepper, beans and carrots. Stir in Garam Masala and curry paste, then add corn, peas and tomatoes. Pour in coconut milk, cover and simmer for about 20 minutes. Finally season with salt and cayenne pepper and serve over rice if desired.
