Vegetable Cheese Ravioli

- 250 g flour
- 3 eggs
- 2 EL oil
- Salt
- 250 g Swiss chard
- 5 EL ricotta
- Pepper
- nutmeg
- 3 onions
- 1 Garlic clove
- 1 small can (425 g) peeled tomato
- 2 EL margarine (or butter)

Knead flour, two eggs, oil and salt into a smooth dough, wrap in foil and chill for about 30 minutes. Wash, trim and finely chop the Swiss chard. Blanch in boiling salted water for about 2 minutes, shock with cold water. Separate the remaining egg white. Mix the chard with ricotta and yolk. Season with salt, pepper and nutmeg.

Peel onions and garlic. Dice onions, slice garlic. Roughly crush tomatoes, heat fat, sauté onions and garlic. Add tomatoes with liquid, season with pepper and salt. Reduce slightly. Roll out dough thinly. Brush one half with egg white, place teaspoons of filling at intervals. Cover with the other dough. Cut into squares 5-6 cm on a side. Press edges with a fork. Boil in salted water for about 10 minutes. Serve with tomato sauce.
