- 600 g eggplant
- 400 g Carrots
- 1 onion
- 2 Garlic cloves
- 40 g spelt whole‑grain flour
- 500 ml Oat drink (Oat milk)

- 100 g grated vegan cheese

Fill the baking dish with the vegetables and sauce. Bake the vegan vegetable casserole in a preheated oven at 200 °C (convection: 180 °C; gas: level 3) for about 30 minutes.
