Vegan Spinach Soup

Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 50 g leeks
  • 2 Potatoes
  • 500 ml vegetable broth
  • 40 g spinach
  • 40 g salad leaves
  • 40 g sorrel
  • 40 g dandelion greens
  • 25 g chervil leaf
  • 25 g chives
  • 25 g parsley
  • Salt
  • pepper (ground)

Instructions

    Wash the leeks, pat dry and roughly chop. Peel the shallot, garlic, and potatoes, then add them with the leeks to a pot of vegetable broth and bring to a boil over medium heat. Simmer covered for about 25 minutes.

    Rinse the herbs and shake off excess water. Rinse the spinach, remove any tough stems, and dry it. Add the spinach and herbs to the remaining ingredients, simmer for another 5 minutes, then remove from heat and blend in a mixer until smooth.
