Vegan Red Lentil Soup

Vegan Red Lentil Soup from Spoonsparrow: super tasty, quick and simple!

Ingredients

  • 1 Red Onion
  • 2 Garlic cloves
  • 30 g ginger
  • 2 carrots
  • 2 stalks celery
  • 2 tbsp Rapeseed oil
  • 2 tbsp Tomato paste
  • 1 l vegetable broth
  • 350 g red lentils
  • 1 tsp curry powder
  • 1 tsp sweet paprika
  • 0.5 tsp ground coriander
  • 0.5 tsp ground cumin
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Apple cider vinegar
  • 2 tbsp chopped parsley

Instructions

    Peel and finely dice the onion, garlic, and ginger. Wash the carrots and celery. Cut the celery into about 2 cm pieces and dice the carrots into roughly 1 cm cubes.

    Heat the oil in a large pot, sauté the onions, garlic, and ginger until softened. Add the tomato paste and cook for another minute. Stir in the carrots and celery, then pour in the vegetable broth. Let simmer for about 5 minutes before adding the lentils and cooking for an additional 10–12 minutes.

    Season the soup with curry powder, paprika, coriander, cumin, salt, pepper, and vinegar. Ladle the vegan red lentil soup into bowls and sprinkle with parsley before serving.
