Vegan Potato Pancakes

Vegan potato pancakes by Adaeze Wolf are quick to make and taste great for the whole family! Here at Spoonsparrow there is a healthy recipe.

Ingredients

  • 1 kg potatoes
  • 1 onion
  • 2 tbsp Whole wheat flour
  • 2 tbsp rolled oats
  • 1 tsp salt
  • a pinch nutmeg
  • some rapeseed oil (or other plant-based oil)

Instructions

    Peel and grate the potatoes and onion finely with a kitchen grater. Place the mixture in a clean kitchen towel and squeeze out as much liquid as possible.

    Combine the potato mixture with flour and oats, season with salt and nutmeg, and shape into uniform pancakes.

  3. 3.

    Heat oil in a hot pan and fry 2–3 pancakes on each side until evenly golden brown. Drain the vegan potato pancakes on paper towels and keep warm in a preheated oven at about 80 °C.

    Repeat the process until all the potato mixture is used up.
