Vegan Çiğ Köfte

Ingredients
- 250 g fine bulgur (bulgur for köfte)
- 1 Garlic clove
- 2 beef tomatoes
- 1 tsp salt
- 0.5 tsp cayenne pepper
- 1 tsp cumin
- 1 tsp paprika powder
- a pinch chili flakes
- 40 g paprika paste (3 tbsp)
- 25 g tomato paste (2 tbsp)
- 2 Spring Onions
- 0.5 bunch Parsley (10 g)
- 0.5 bunch mint (10 g)
- 2 salad heads
- 1 Organic lemon
- 5 radishes

Pour 250 ml hot water over the bulgur, stir and let it soak for 10 minutes.

Meanwhile, peel and finely chop the garlic. Blanch the tomatoes in boiling water, cool them, peel, remove seeds, and cut the flesh into small cubes.

Add the garlic, tomatoes, salt, spices, paprika paste, and tomato paste to the bulgur and knead vigorously for about 5 minutes (best with gloves). Let rest for 20 minutes.

In the meantime, clean and finely slice the spring onions. Wash, dry, and finely chop parsley and mint. Separate salad leaves from the head, wash, and pat dry. Peel the lemon, grate it, halve it, and cut into slices. Clean radishes, wash, and dice them small.

Knead parsley, half of the mint, and spring onions into the dough. Cut about 30 walnut‑size pieces and press in your hand to form long rolls (köfte).

Place each köfte on a salad leaf, sprinkle with remaining mint and radishes, and serve with lemon wedges.
