Ingredients

  • 63 g yeast (1.5 cubes)
  • 2 tbsp Raw cane sugar
  • 4 tbsp ground flaxseed
  • 200 ml Oat Drink (Oat Milk)
  • 5 tbsp Rapeseed Oil
  • 240 g spelt flour type 630
  • 160 g whole wheat flour
  • 2 tsp salt
  • 5 tbsp soy yogurt alternative
  • 3 tbsp soy cream
  • Sesame seeds to taste
  • Chia seeds to taste
  • Black cumin to taste

Instructions

  1. 1.

Crumbly the yeast in a bowl, sprinkle sugar over it and set aside for 5 minutes until the yeast liquefies.

  2. 2.

Stir ground flaxseed with 3 tbsp oat drink and 3 tbsp rapeseed oil. Add flour, salt, soy yogurt alternative, yeast and remaining oat drink to a bowl and knead into a smooth dough using hand‑held mixer attachments.

  3. 3.

Let the dough rise in a warm place for 45 minutes until it has doubled in volume.

  4. 4.

Divide the dough into eight portions, shape into balls and place on a baking sheet lined with parchment paper. Let rise again in a warm spot for another 25 minutes.

  5. 5.

Mix soy sauce with remaining oil and brush over the buns. Sprinkle sesame seeds, chia seeds and cumin as desired. Bake in a preheated oven at 220 °C (fan 200 °C; gas: level 3–4) for about 12–14 minutes. Cool vegan burger buns on a wire rack.
