Ingredients

  • 1 dry yeast
  • 250 ml lukewarm soy drink (soy milk)
  • 1 tsp sugar
  • 0.5 tsp red pepper berries
  • 1 handful mixed herbs (e.g., wild garlic, parsley, thyme)
  • 300 g flour
  • 1 tsp salt
  • flour (for working)
  • olive oil (for the tins)
  • 1 tbsp Olive Oil

Instructions

    Stir the yeast with the milk and sugar. Let sit for a few minutes. Crush the pepper berries in a mortar. Wash the herbs, shake dry and finely chop them. Add flour, salt, and olive oil to a mixing bowl and pour in the yeast mixture.

    Knead into a smooth dough. Incorporate the herbs and pepper. Adjust flour and milk amounts if needed. Cover and rest for about 20 minutes. On a floured surface, knead again, shape into 8 equal balls and cut off about one‑third from each to form smaller spheres.

    Place the large dough balls in greased brioche tins, create a small indentation and press the small spheres onto them. Press the dough between the small sphere and the rim. Cover and let rise for about 40 minutes. Preheat oven to 180°C (350°F) with top and bottom heat. Brush the brioches with olive oil and bake for 20–25 minutes until golden brown.
