Ingredients

  • 1 untreated lime
  • 80 g brown sugar
  • 1 vanilla pod
  • 2 Avocados
  • 200 ml coconut cream
  • 1 handful coriander leaves
  • coriander leaves
  • Lime slice

Instructions

    Wash the lime hot, dry rub and thinly cut off the zest. Squeeze out the juice.

    Bring the sugar with the split vanilla pod, lime zest and 100 ml water to a boil. Let it bubble for a few minutes, remove from heat and let cool.

    Peel the avocado, halve it, remove the pit and finely puree the flesh in a blender. Strain the syrup through a sieve, add the coconut cream and coriander leaves and blend everything until creamy.

    Finish in an ice machine and serve scooped into balls. Garnish with coriander leaves and lime slices as desired.
