Veal with Pepper Sauce

Ingredients

  • 2 steaks (from veal side)
  • 1 tbsp Olive Oil
  • 10 g butter
  • salt (pepper)
  • 100 ml red wine
  • 1 tbsp sour cream
  • 250 ml beef broth (from the jar)
  • 30 g Butter
  • 1 peppercorn (from the jar)
  • 1 tbsp peppercorns
  • 1 tbsp juice

Instructions

    Wash the meat, pat dry, salt and pepper. In a heavy pan heat butter and olive oil and sear the steaks on both sides for 4-5 minutes each. Wrap in foil and rest. Deglaze the pan with red wine, add pepper juice and reduce. Stir in crème fraîche, pour in beef broth and reduce again. Add cold butter while stirring, finally stir in peppercorns.
