Veal Strips and Crêpe Packets with Mushrooms

Ingredients

  • 250 g flour
  • Salt
  • pepper (ground)
  • 2 Eggs
  • 200 ml sparkling water
  • 125 g whipping cream
  • 150 ml milk
  • 1 tbsp chopped parsley
  • oil
  • 500 g veal strips
  • 300 g Mushrooms
  • 200 ml veal stock (glass)
  • 2 shallots
  • 2 tbsp butter
  • Chives

Instructions

    Whisk flour, milk, salt, eggs and sparkling water into a crêpe batter. Let rest 30 minutes. Then in a small pan with a little oil cook several crêpes one after another and keep warm. Clean mushrooms and cut into small pieces. Peel shallots, finely dice them and sauté in hot butter until translucent, add mushrooms and steam until soft, season with salt and pepper. Place 1-2 tbsp of mushroom mixture on each crêpe and tie small packets with a chive stem. Keep warm.

    Sear veal strips briefly in a hot pan with oil, seasoning with salt and pepper. Remove meat and keep warm. Deglaze the pan with stock, reduce slightly with cream, season with salt and pepper. Return meat to the pan, stir in parsley. Serve with the warm crêpe packets.
