- 1 large veal shank
- Salt
- Pepper
- 2 tbsp clarified butter

Wash the veal shank, pat dry and rub with salt and pepper.

Heat clarified butter in a braising pot and brown the veal shank on all sides. Cover and transfer to a preheated oven at 200°C for about 1 hour of slow cooking. In the last 15 minutes open the pot and baste with the pan juices.
