Veal Schnitzel with Pizza Crust

Ingredients
- 8 veal schnitzels (about 80 g each)
- Salt
- Pepper (freshly ground)
- 5 tbsp olive oil
- 8 sage leaves
- 8 slices Parma ham
- 200 g mozzarella
- 1 handful Arugula
- 150 g cocktail tomatoes
- 2 tbsp balsamic vinegar
- 1 tbsp Lemon Juice
- 0.5 tsp honey

Preheat the oven to grill mode.

Wash, pat dry and lightly pound the schnitzels if desired. Season with salt and pepper, then sear briefly in 2 tbsp hot oil on both sides; remove from pan. Place on a parchment-lined baking sheet. Layer sage leaves and Parma ham on top. Slice mozzarella and distribute over the meat. Broil under the preheated grill for 6-8 minutes until melted.

Wash and dry arugula thoroughly. Wash tomatoes, halve them, and arrange decoratively around the plate edges. Mix remaining oil with balsamic vinegar, lemon juice, and honey; season with salt.

Arrange the schnitzels on plates (cut in half if preferred), top each with a few arugula leaves, and drizzle with dressing before serving.
