- 800 g veal liver
- Salt
- Pepper (freshly ground)
- 1 tbsp balsamic vinegar
- 1 Tbsp clarified butter
- 0.5 head lettuce
- 1 spinach leaf
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil

Clean the veal liver, cut into about 1 cm thick slices and optionally halve them crosswise.

Quickly sear the liver in hot clarified butter on both sides, just lightly browning so it remains pink inside (check with a finger if still tender), deglaze with balsamic vinegar, flip briefly, season with salt and pepper, then remove from heat.
