Various Polenta Bites

Ingredients

  • 5 slices Parma ham
  • 5 mini mozzarella balls
  • 5 basil leaves
  • 200 g cornmeal
  • Salt
  • 125 g freshly grated Parmesan
  • 3 tomatoes
  • Salt
  • Pepper (freshly ground)
  • 1 Garlic clove
  • 1 tbsp Olive Oil
  • 2 tbsp finely chopped basil
  • 1 small zucchini
  • 1 small eggplant
  • 1 green bell pepper
  • 2 tbsp olive oil
  • 1 tsp thyme leaves
  • Salt
  • Pepper (freshly ground)
  • balsamic vinegar

Instructions

  1. 1.

    Stir polenta into 500 ml boiling salted water, let it thicken according to instructions, fold in Parmesan and spread about 1.5 cm thick onto a sheet. Let cool.

    Wash tomatoes, quarter, seed, dice small and mix with salt, pepper, pressed garlic, olive oil and basil.
