Various Pesto

Ingredients

  • 2 tbsp shelled almonds
  • 80 g parsley
  • 40 g mint
  • 1 Garlic clove
  • 150 ml olive oil
  • 2 tbsp grated Pecorino cheese
  • Salt
  • Pepper (freshly ground)
  • 2 red bell peppers
  • 80 ml olive oil
  • 2 Tomatoes
  • 2 tbsp pine nuts
  • 1 Garlic clove
  • a pinch dried lavender buds
  • 2 tbsp freshly grated Parmesan cheese
  • Lemon juice
  • Salt
  • Cayenne pepper

Instructions

    For the mint pesto, toast the almonds in a dry pan until golden yellow, remove and let cool. Rinse the parsley and mint, shake off excess water, pat dry, and roughly chop. Peel the garlic cloves. Blend the herbs, almonds, and garlic in a food processor or blender until finely pureed, gradually adding olive oil until a smooth pesto forms.

    Finally stir in the Pecorino cheese and season with salt and pepper to taste.
