Ingredients
- 300 g mascarpone
- 300 g whipping cream
- 100 g sugar
- 3 eggs
- 3 egg yolks
- 1 splash rum
- 5 vanilla beans

Whisk the eggs and 3 yolks with a splash of rum. Add sugar and scrape the seeds from 5 vanilla beans. Whisk the mixture over a hot water bath until the sugar dissolves. Fold in the whipping cream, not fully stiff. Remove the bowl from the water bath and set aside. Add mascarpone to the egg‑rum mixture and fold gently. Pour the batter into molds and freeze.

Serve chilled, garnished with orange zest and vanilla bean pods.
