Fresh Udon noodles tossed in a vibrant vegetable ragout featuring zucchini, tomatoes, yellow bell pepper, onion, and garlic.
Ingredients
- 200 g udon noodles
- 2 Zucchini
- 5 ripe large tomatoes
- 1 yellow bell pepper
- 1 onion
- 2 cloves garlic
- 2 tbsp olive oil
- Salt
- freshly ground pepper

Wash the zucchini, halve them, and cut into pieces. Wash the bell pepper, halve it, remove seeds, and dice. Peel and dice the onion. Wash the tomatoes, blanch in boiling water, peel, halve, seed, and cut into wedges. Peel and finely chop the garlic.

Heat oil. Sauté onion and garlic until translucent. Add zucchini, tomatoes, and bell pepper; cover and simmer over medium heat for 15 minutes. Season with salt and pepper. Prepare Udon noodles according to package instructions and mix with the ragout. Divide among serving bowls and serve hot. Optionally garnish with fresh vegetables.
