Udon Noodles with Chicken

Udon noodles with chicken from Spoonsparrow – aromatic, hearty and always a hit on the plate.
Ingredients
- 400 g frozen udon noodles (about 2 packages)
- 600 g Chicken breast fillet
- Salt
- Pepper (freshly ground)
- 10 cm lemongrass
- 6 tbsp oil (60 g)
- 1 clove garlic
- 1 Spring onion
- 100 ml oyster sauce
- 2 tbsp light soy sauce (30 g)
- 100 ml chicken broth
- 1 tsp Honey

Let the noodles thaw. Cut the chicken into small cubes and mix with salt, pepper, 2 tbsp oil and lemongrass; marinate for 30 minutes.

Peel and finely chop the garlic. Wash the spring onion and slice into thin rings.

Heat 4 tbsp oil in a wok and stir-fry the garlic and spring onions for 30 seconds. Add the chicken and cook for 1–2 minutes. Season with oyster sauce, soy sauce and honey, then add the broth.

Cook the noodles in a pot of boiling salted water for 30 seconds, drain and let them dry slightly. Toss with the chicken and sauce. Plate the udon noodles with chicken on bowls and serve.
