Turnip Soup with Smoked Pork

A hearty turnip soup featuring smoked pork, fresh vegetables, and a creamy finish. Try this comforting dish and many others from Spoonsparrow!

Ingredients

  • 1 l vegetable broth
  • 600 g smoked pork cutlet
  • 800 g turnip
  • 1 leek stalk
  • 1 bunch flat-leaf parsley
  • 250 ml heavy cream
  • salt and freshly ground pepper
  • 4 tbsp roasted onions

Instructions

    Pour the vegetable broth into a pot. Add the smoked pork and simmer for 30 minutes over medium heat. Peel and dice the turnip. Clean, rinse, and slice the leek into rings. Rinse the parsley (reserve some for garnish), pat dry, and pluck the leaves from the stems.

    Remove the pork from the broth and cube it. Add the diced turnip, sliced leek, and parsley to the broth; cover and cook for 40 minutes.

    Take half of the cooked vegetables, transfer them to a tall glass, pour in the cream, and blend with a whisk stick until smooth. Stir the puree into the soup using an egg beater. Season the soup with salt and pepper, sprinkle roasted onions on top, and serve garnished with parsley.
