Ingredients

  • 250 g sugar
  • 6 sheets gelatin
  • 3 tbsp cornstarch
  • 1 tsp rose water
  • 150 ml cherry juice
  • 1 tsp orange blossom water
  • 150 ml orange juice
  • 100 g powdered sugar

Instructions

    Add 125 ml water and sugar to a pot and simmer until the sugar dissolves. Soak gelatin in lukewarm water. Whisk cornstarch with some cold water, stir into the sugar-water, and continue to simmer. Divide the liquid between two vessels.

    For red lokum, stir rose water and cherry juice; for yellow, stir orange blossom water and orange juice into each half of the liquid. Remove the sugar syrup from heat. Squeeze out excess water from gelatin and fold into each half. Line two shallow molds (about 15 x 15 cm) with parchment paper, pour the mixtures in, and let cool completely. Then remove from the mold, lift off the parchment. Cut the gel into rectangular pieces and roll them in powdered sugar.
