Turkey Vegetable Skewers

Ingredients

  • 1 bunch Coriander
  • 4 dried tomatoes in oil
  • 0.5 organic orange (juice and zest)
  • 3 tbsp olive oil
  • Salt
  • 500 g Turkey breast fillet
  • 2 Zucchini
  • 200 g ostrich tomato
  • 10 fresh bay leaves

Instructions

    For the marination wash, dry shake and finely chop coriander. Drain the dried tomatoes and dice them finely. Mix coriander with dried tomatoes, orange zest and juice, olive oil and salt.

    Cut the turkey breast fillet into larger cubes. Toss the meat with about half of the marinade and cover for 1 hour in the refrigerator.

    Rinse and trim the zucchini, cut into thicker slices. Rinse the tomatoes. Skewer alternating pieces of meat, zucchini, tomato and bay leaf on sticks.

    Grill over hot charcoal for about 12–15 minutes, brushing the skewers with the remaining marinade as they cook. Finish by seasoning with salt.
