Turkey Strips with Mushrooms

Turkey strips with mushrooms from Spoonsparrow are healthy and delicious.
Ingredients
- 150 g long-grain rice (parboiled)
- Salt
- 320 g turkey breast fillet
- 1 onion
- 200 g mushrooms
- 2 tbsp olive oil
- Pepper
- 0.5 tbsp spelt whole‑grain flour
- 250 ml vegetable broth
- 200 ml cooking cream
- dried Thyme
Instructions

Cook the rice in boiling salted water according to package instructions.

While the rice cooks, wash, pat dry and slice the turkey breast into strips.

Peel, halve and thinly slice the onion; clean and halve the mushrooms.

Heat oil in a pan and quickly sear the turkey strips over high heat. Season with salt and pepper and remove from the pan.

Add onions and mushrooms to the pan. Sauté for 2 minutes over medium heat while stirring.

Dust the onion‑mushroom mixture with flour, pour in the broth, and bring to a boil.

Return the cooking cream and turkey strips to the pan; simmer on medium heat for 5 minutes. Season with salt, pepper, and thyme, then serve over rice.
