Turkey Skewers on Spinach Rice
Turkey skewers served over spinach rice with almonds & raisins: rich in unsaturated fats, minerals and vitamins, making spinach rice a healthy delight.
Ingredients
- 250 g Turkey breast fillet
- 2 red onions
- Salt
- Pepper
- 600 g fresh flat-leaf spinach
- 100 g basmati rice
- 2 tbsp olive oil
- 50 g whole blanched almond kernels
- nutmeg
- 50 g Raisins
Instructions

Rinse the turkey, pat dry and cut into cubes.

Peel and quarter the onions. Alternate threading meat and onion pieces onto four wooden skewers. Season with salt and pepper.

Clean and wash the spinach thoroughly.

Cook the rice in 200 ml boiling salted water covered for about 10 minutes.

Meanwhile heat oil in a non-stick pan. Brown the skewers on all sides over medium heat, then briefly toast the almonds on the side.

Let the spinach wilt in a pot over medium heat until it is almost dry. Season with salt, pepper and grated nutmeg.

Drain the spinach in a sieve, let it cool slightly, then roughly chop.

Fold the spinach, almonds and raisins into the rice. Arrange the turkey skewers on top.
