Ingredients
- 100 g Dried Apricots
- 50 g almond sticks
- 4 thin turkey cutlets (≈140g)
- Salt
- Cayenne pepper
- 2 tbsp sprouted oil
- 125 ml vegetable broth (instant)
- 1 can ground saffron
- 200 g chunked canned tomatoes

Soak apricots 2 hours in warm water, drain and dice. Roast almonds in a dry pan until golden brown. Flatten cutlets slightly with a hammer. Season with salt and cayenne pepper. Spread apricots and almonds on each cutlet, roll up, and secure with skewers.

Heat oil in a pan and sear the rolls briefly on all sides until golden brown. Add broth, stir in saffron, cover, and simmer over low heat for about 20 minutes, turning occasionally. Remove rolls and keep warm covered. Add tomatoes to the sauce, reduce slightly while stirring, season with salt and cayenne pepper.
