Ingredients
- 2 Tomatoes
- 1 onion
- 1 Garlic clove
- 80 g green olives
- 400 g turkey breast fillet
- 2 tbsp olive oil
- 2 tbsp freshly chopped coriander leaves
- Salt
- chili powder
- 8 wheat tortillas
- 4 large wheat tortillas
- 200 g shredded mozzarella
- 200 g shredded cheese (e.g., cheddar)

Peel, blanch, cool, deseed and dice the tomatoes. Peel and finely chop the onion and garlic. Chop the olives small. Rinse the turkey breast and pat dry. Either finely chop or feed through a meat grinder.

Sauté the onion with the garlic in hot oil until crumbly. Add the onion and garlic and cook for about 2 minutes more. Add the tomatoes and cook for about 5 minutes until done. Stir in the coriander leaves and olives, season with salt and chili.
