A crunchy delight with low fat and plenty of flavor that kids love—fresh from the oven.

Ingredients

  • 50 g arugula (about 0.5 bunch)
  • 30 g low‑fat quark (2 tbsp)
  • 1 tbsp milk (1.5% fat)
  • 1 tbsp Rapeseed Oil
  • 50 g flour (type 1050)
  • a pinch of salt
  • 1 tsp Baking powder
  • 20 g zucchini (1 piece) or 1 mini zucchini
  • 15 g raw turkey ham (1 slice)

Instructions

  1. 1.

Wash the arugula, shake dry, remove thick stems and finely chop the leaves.

  2. 2.

Add low‑fat quark, milk and rapeseed oil to a bowl. Stir in 1 tbsp of arugula and mix well. Set aside 1 tbsp of the quark‑herb mixture.

  3. 3.

In another bowl combine flour with salt and baking powder. Add the quark‑oil mixture and knead with hand mixer hooks until an elastic dough forms.

  4. 4.

Wash, peel and finely grate the zucchini skin. Knead it into the dough. Shape the dough into a ball, then roll out into a round pizza using a rolling pin.

  5. 5.

Line a baking tray with parchment paper, place the pizza base on it and bake in a preheated oven at 220 °C (fan: 200 °C, gas: level 3‑4) for about 15 minutes.

  6. 6.

Meanwhile cut the turkey ham into squares or strips. Remove the pizza from the oven, spread the reserved herb quark over it, top with ham pieces and sprinkle arugula on top.
