Turkey Breast with Honey Sesame Crust and Orange Chili Sauce

Ingredients
- 1 kg turkey breast fillet
- salt, pepper from the mill
- 1 Tbsp clarified butter
- each 2 onions, garlic cloves and sliced chili peppers
- 375 ml instant chicken broth
- juice of two oranges
- each 400 g carrots and broccoli
- 2 tbsp honey
- each 1 tbsp cornstarch and unhulled sesame seeds

Rub turkey breast with salt and pepper. Heat clarified butter in a roasting pot and sear the turkey on all sides.

Peel and dice onions and garlic, add sliced chili peppers to the fat and cook until golden brown. Deglaze with broth and orange juice. Cover and simmer for about 45 minutes.

Peel carrots and cut into pieces. Trim broccoli and separate into florets; peel stem and cut into pieces. Blanch carrots in lightly salted water for ~10 minutes, broccoli for ~5 minutes.

Place the roast on a plate. Brush with honey and sprinkle sesame seeds. Briefly broil to crisp the crust.

Strain the roasting liquid, bring to a boil, and thicken with prepared cornstarch slurry. Season with salt and pepper. Plate everything together. Serve with potato dumplings or boiled potatoes.
