Ingredients

  • 2 EL Butter
  • 1 onion
  • 300 g sausage meat
  • 50 g fresh breadcrumbs
  • 1 orange (organic, juice and zest)
  • 2 EL dried cranberries (or lingonberries)
  • 75 g pine nuts (coarsely chopped)
  • 2 EL finely chopped sage leaves
  • Salt
  • pepper (ground)
  • 1.8 kg turkey breast fillet
  • 1 egg
  • 300 g flour
  • 150 g cold butter (or pork lard)
  • 1 pinch salt
  • 1 egg
  • 1 egg yolk

Instructions

    Peel and finely chop the onion, then sauté in hot butter until translucent. Mix with sausage meat, breadcrumbs, orange juice and zest, cranberries, pine nuts and sage; season with salt and pepper.

    Slice the turkey lengthwise without cutting all the way through, open it like a book, lightly pound flat, place filling in the center, fold back together and tie with kitchen twine. Place roast in greased roasting pan, cover with foil, bake at 200°C for 1½ hours.
