Ingredients
- 2 EL Butter
- 1 onion
- 300 g sausage meat
- 50 g fresh breadcrumbs
- 1 orange (organic, juice and zest)
- 2 EL dried cranberries (or lingonberries)
- 75 g pine nuts (coarsely chopped)
- 2 EL finely chopped sage leaves
- Salt
- pepper (ground)
- 1.8 kg turkey breast fillet
- 1 egg
- 300 g flour
- 150 g cold butter (or pork lard)
- 1 pinch salt
- 1 egg
- 1 egg yolk

Peel and finely chop the onion, then sauté in hot butter until translucent. Mix with sausage meat, breadcrumbs, orange juice and zest, cranberries, pine nuts and sage; season with salt and pepper.

Slice the turkey lengthwise without cutting all the way through, open it like a book, lightly pound flat, place filling in the center, fold back together and tie with kitchen twine. Place roast in greased roasting pan, cover with foil, bake at 200°C for 1½ hours.
